It should be noted that the egg membrane is characterized by its high protein content (including lysozyme, ovotransferrin, ovocleidin, clusterin, ovoceratin, and ovodefensin) and especially by its collagen content. It also contains carbohydrates such as hyaluronic acid and glycosaminoglycans. All of these components contribute to embryo development and provide protection. Some of these compounds are antimicrobial in nature and also play an essential role in the metabolic processes and development of the offspring.

It is also important to note the use of this structure for the production of biologically active peptides, especially peptides with antioxidant activity. More recent studies have shown that eggshell membranes are able to reduce inflammation by increasing the secretion of the anti-inflammatory cytokine interleukin (IL)-10 and decreasing the secretion of the pro-inflammatory cytokines IL-1ß and IL-6, which have an effect on the immune system. Furthermore, the environmental applications of eggshell membranes are notable, including their use as an absorber of carbon dioxide and heavy metals. In the biomedical field, the membrane's use as a biocompatible and biodegradable film for the treatment of wounds and burns has been investigated, thanks to its high collagen content.
