Any suggestions for people who have been on keto for many months/years, do daily exercise and weight training and find it almost impossible to eat even small amounts of whole food carbs without extreme fatigue & extreme mood change reactions?

So why is my weight inching up since adding carbs back in? I eat little to no linoleic acid, but I DO deal with hashimotos.
